Egg Basics

 

The following recipes use the same basic method to start with:.

Use a small amount of oil

Heat your frying pan to a moderate temperature.

crack the egg into the pan

 

Fried - Done in a frying pan

Sunny Side - whites are fully cooked but the yolks are still Yellow and runny.

Over Easy - Eggs are flipped when the white is just about fully cooked and left just long enough for a     light white film to develop over the yolks. The yolk should still be runny inside..

Over Medium - Eggs are flipped and the yolk is allowed to partially cook, yolk should still be partially      liquid.

Over Hard - Eggs are flipped until yolk is fully cooked and light yellow in colour.

 -Yolks can be broken, but don’t have to be..

 

Basted - Done in a frying pan , with a cover and water

 Eggs are not flipped, instead a small amount of water is placed with the eggs.

   The eggs are then covered with a lid and cooked using the steam.

Soft - The whites are cooked, the yolk is still completely runny, but has a white covering.

Medium - Whites are fully cooked and the yolk has just begun to cook and change colour.

Hard - Whites and yolk are fully cooked until hard.  

 

Scrambled - Done in a frying pan  

Eggs mixture  is poured onto the flat top, then the egg is continually pushed onto itself until a pillow forms. At this point the egg can be covered and a small amount of water placed under the lid to finish the cooking. This will also make a fluffier egg pillow.

Omelet - Done in a frying pan

- spread egg mixture thinly on flattop

- try to maintain a round shape, by pushing the edges of the egg back on them self.

- Flip the omelet and add toppings down the centre.

- allow  omelet to finish cooking, then fold each uncovered side into the middle.

 

Poached - Done in pot of hot water

Fill a pot with water and bring it to a simmer or slow boil, do not cover..

Crack your eggs directly in the water.

Soft - The whites are cooked, but the yolk is still completely runny

Hard - Whites and yolk are fully cooked until hard.
